"The DVR" is the latest in a squad of sausage creations honoring chefs from Hinterland, Goodkind and other local restos.

Bay View’s The Vanguard is immortalizing chefs in sausage — local chefs who appreciate a rad sausage. Chef Shay Linkus runs a different sausage homage every four months. It started with the Flaming Hot Cheeto brat with Cheez Whiz named after Goodkind’s Paul Zerkel. That link was followed by the Bachhuber, a red wine and shortrib sausage with veal demi, blue cheese and fried shallot. (Ross Bachhuber is one of the owners of Odd Duck, Linkus’ former place of employment.) Right now, the menu features the DVR – for Hinterland’s Dan Van Rite. That creation is an elk-mustard sausage with cottage cheese and smoked herbs. After the DVR has run its course, Linkus will offer up his next creation — in honor of either Odd Duck’s Dan Jacobs or University Club’s Matt Kerley. (2659 S. Kinnickinnic Ave., 414-539-3593).
