And the chef has a very impressive resume.

On the western side of Brady Street, chef Dane Baldwin is ready to debut his The Diplomat (815 E. Brady St.) to the world. It opens Tuesday, Aug. 15, in the former Bosley on Brady. The Diplomat, described as both small plates and regional American – to those of us who like labels – draws on the Baldwin’s wide-ranging skills. His most recent gig was executive chef of Mr. B’s Steakhouse in Brookfield, but he’s also worked at Bacchus, the former Barossa, Harbor House and Carnevor.

The menu at this 70-seat place (with an additional 30 seats at the bar) features 10 plates, plus three desserts. Included are Diplomat fries with garlic mayo; soft-shell crab with fried green tomatoes; corn bruschetta with ricotta, cherry tomato, shallot and bell pepper; pickled shrimp salad; Cornish hen with fingerling potatoes, carrots and herb emulsion; and New York strip with potato puree and cured egg yolk ($6-$17). Desserts range from buttermilk panna cotta and cherry pie to chocolate mousse ($6-$7).

Hours: Tues-Thurs 5-10 p.m.; Fri-Sat 4-10 p.m.
