Downtown’s Getting an Exciting New Restaurant!

The Wolf on Broadway is coming to Kinn boutique hotel this summer.

You ready for a new restaurant? I think you are. The people behind Uncle Wolfie’s Breakfast Tavern in Brewers Hill took to Instagram to announce a second endeavor for them – a resto called The Wolf on Broadway, to open in the under-development Kinn Downtown (600 N. Broadway).

The new hotel is a sibling of Bay View’s Kinn Guesthouse (2535 S. Kinnickinnic Ave), which is home to the Italian joint Sorella. The 32-room Kinn Downtown, expected to open in the coming weeks, includes a rooftop venue called The Lookout.

What I know about The Wolf restaurant so far is that owners Wolfgang and Whitney Schaefer brought on Kristen Schwab, former chef de cuisine at DanDan, to be executive chef. Schwab, who is a whiz at crafting dumplings (among other foods), has done pop-ups under the name Phat Dumpling. Schwab was also one of the local rock stars in our Chef Event in 2019

The Wolfie’s folks plan to do pop-ups – at Uncle Wolfie’s – as a lead-up to the The Wolf’s opening, projected for this summer. No word on the type of cuisine or hours of operation. They also plan to work with MKE’s Three Sixty on the buildout. That design company has done interiors for a whole lot of local restaurants and drinking establishments, including Char’d, Hacienda Beer Co., and, yes, Uncle Wolfie’s Breakfast Tavern.
