I’ve got great news here in the form of little ring-shaped breads. Ruby’s Bagels, which started as a mobile food operation at Zócalo Food Park (636 S. Sixth St.), is making its brick-and-mortar debut! The new space (5513 W. North Ave.) officially opens Saturday, May 31 (8 a.m.-2 p.m.).

Owner Daniela “Ruby” Varela wants to keep things simple, menu-wise, so expect the same assortment of bagels and bagel sandwiches as she offers on the food truck. “The less you have to think about in the morning, the better we are set up for the rest of the day. We love staples and want to keep making them great,” Varela told me recently. That’s bagels in flavors such as a plain, poppyseed, everything, rosemary sea salt, and cinnamon cranberry. The obligatory cream cheese comes in plain, jalapeno, strawberry, and green onion and cheddar varieties. And sandwiches include the EC (two eggs and American cheese on a toasted bagels) and classic lox. Coffee? She’s got that, too – drip coffee from aptly named Ruby Roasters, a company from just outside of Stevens Point.
A couple of other notes: Online ordering will not be available at the brick-and-mortar just yet. Ruby’s hours for Sunday June 1 are 8 a.m.-1 p.m. The Ruby’s truck at Zócalo is closed this weekend, but will be back churning out the goods next week.
Regular hours starting June 7: Wed-Fri 7 a.m.-2 p.m.; Sat-Sun 8 a.m.-2 p.m.
