Egg & Flour Owner to Close Tosa’s Metcalfe Market Location

But owner/chef Adam Pawlak says it allows him to focus on his two locations and still “grow the brand.”

Egg & Flour Pasta Bar came onto the scene in 2019 when owner Adam Pawlak opened his first location, at East Side food hall Crossroads Collective (2238 N. Farwell Ave.). Pawlak, who rose to fame beyond Milwaukee when he appeared on the Gordon Ramsay show “Hell’s Kitchen,” followed it up with the Bay View space in March of 2020. One year later, he debuted a third counter-service location, inside Metcalfe Market (6700 W. State St.).

It’s that Tosa spot that Pawlak plans to close in the next few weeks – but he says he’s not broken up about it. His other locations are “doing good,” he says, and he plans to take the opportunity to center his attention on the other two locations.

“In Bay View, I’ll be able to do more buyouts [a customer buys out the restaurant for the night] and previews,” he says. And now, he says, he can also think about starting cooking classes, long one of his goals. “We’re not going to run a bunch of specials or pity posts” about the Tosa closing, Pawlak adds.  

He’ll also likely be more visible at his other restaurants. “I’m going to do a lot of weekends at Bay View. People like seeing me in there,” he says. 

Pasta isn’t Pawlak’s only culinary focus.  He also runs the E&F Pizzeria at the Crossroads Collective location.

As for the Tosa location closing, he says that will happen in early February.
