Carbon Steak (725 N. Milwaukee St.) – the high-end restaurant from Milwaukee’s Volante Group – is getting real close to making things official. The concept – which will offer USDA prime-cut steaks, Japanese wagyu beef and roasted seafood towers – has set Dec. 8-9 (Fri-Sat) for its grand opening date.
The 116-seat restaurant also features a cocktail lounge and a 30-seat mezzanine space overlooking the restaurant. In spring, they plan to offer outdoor dining.

Partnering with Kahler Slater Studio on the design, Volante went for a design aesthetic that combines darker, intimate tones with a soft, feminine undertone, according to Volante’s Prince and Sunny Singh. The restaurant group was founded by Balbir Singh, who owns Maharaja Indian restaurant. He purchased the building in 2020 from SURG Restaurant Group, which owns Carnevor steakhouse across the street.
Volante also announced some key staff for Carbon, including chef Thomas Quinn (most recently of Mastro’s in Chicago) and executive sous chef Juan Carlos Guerra (of Fleming’s Brookfield and Carson’s steakhouse). Per the press release, Quinn created the “innovative yet approachable menu based on American classics and composed plates influenced by global cuisines.” Some dishes will be finished tableside by chef Quinn “to bring a unique entertainment aspect” to the dining experience.

The drink menu will include wines from various regions worldwide and specialty cocktails. “Dry” or N/A beverage options will range from wines and beers to mocktails and spirits.
Carbon will serve dinner Tuesday-Sunday; brunch service on Saturdays and Sundays will follow at a later date.
