Silver Spring Golf Club’s mantra is “zero waste.” The Menomonee Falls facility (N56 W21318 Silver Spring Dr.) claims it is the first golf club in Wisconsin to use the Bokashi fermentation system. Or rather, it will be. The company announced today that it is “transforming” its restaurant and wedding/banquet operations to zero waste with this Japanese form of composting. Bokashi is said to be a non-smelly fermentation process that can recycle meat, fish and dairy scraps. (In traditional composting, dairy cannot be converted into usable fertilizer).
