
8-twelve Exit
Aaron Patin’s name has appeared in recent installments of Dish on Dining. The former Charro Restaurant chef has been in the thick of getting soon-to-open 8-twelve off the ground (17800 W. Blue Mound Rd., Brookfield). That’s the Aaron Rodgers-Ryan Braun restaurant set for the one-time Charro space in Brookfield. Patin is trading his SURG Restaurant Group title for that of “Coffee Chef” at Milwaukee’s Stone Creek Coffee Roasters. Patin says he’ll be with SURG until early June, at which point it’s all Stone Creek, all the time. The SC people are hot and heavy into building their Stone Creek Kitchen at the Factory (533 N. Fifth St.), which might be up and running in August. Beyond supplying from-scratch edible items for the company’s eight cafes, it will have other tricks up its sleeve. (More on that soon, hopefully.) Incidentally, at SURG’s Third Ward restaurant Ryan Braun’s Graffito (102 N. Water St.), chef Dane Baldwin is no longer at the helm. The new guy is Joseph McCormick, whose food industry experience ranges from a Wisconsin country club to restaurants in New York City.
