Wing people, listen up. From now on, Wednesday nights may require a nightcap of milk. Habaneros, ghost peppers, Szechuan peppercorns – they’re all heat hydrants featured prominently on Trocadero Gastrobar’s new Spice Night menu. From 5 p.m. to close – and only on Wednesday nights – the East Side resto is serving up jumbo chicken wings (75 cents each) in five spicy flavors. There’s Buffalo, sweet wild honey, Flaming Lips and Black Widow. The Wednesday menu includes other hot stuff like spicy chopped salad, Scorched Earth sliders, and hot chocolate cake ($6-$21). The heat extends to the drinks – for instance, the jalapeno cucumber margarita. Fire! (1758 N. Water St., 414-272-0205)

Do you have your hat yet? The Kentucky Derby is just a few blooming lilac bushes from now. May 5. So far, I’ve got two bar-restaurants ready to mix up some mint juleps. The Iron Horse Hotel’s (500 W. Florida St.) “Talk Derby to Me” party starts at 3 p.m. It features the obligatory cocktails and a live bugler. And if your hat is deemed the best, you’ll win a $50 bar tab. At Maxie’s Southern Comfort (6732 W. Fairview Ave.), executive chef Joe Muench is running a special menu, which includes Kentucky hot browns, beer cheese and bourbon balls. The festivities get underway at 1 p.m., which is also the projected start time for The Dirty Bucket Band (whose music seems to fall under many umbrellas, including bluegrass and Zydeco). Admission: $7. Derby start time: 5:24 p.m. (central time)
