This Bites: A Kitchen Takeover at the Iron Horse Hotel’s Ash

The culinary podcast featuring 88Nine’s Tarik Moody and MilMag’s Ann Christenson talking about all things dining-related.

Hey y’all. It’s the weekend and Tarik Moody and I have a very topical episode of This Bites for you. (And remember, This Bites airs at 8 a.m. on Friday mornings on 88Nine Radio Milwaukee.) The longer, podcast version just offers more for you to love. Yeah.

Two restaurant kitchen takeovers are happening very soon. The first is at Ash, the new restaurant at the Iron Horse Hotel. They’re bringing in uber-talented Minneapolis-based chef Jorge Guzman, a Yucatan native who is the former executive chef of Solera Restaurant and Surly Brewing Co. He now runs a pop-up wood-fired charcoal chicken restaurant inspired by the Yucatan Peninsula, and he will be showcasing some of the foods he’s cooking right now. The Ash pop-up is this weekend  Sunday, Dec. 8, 5-9 p.m. You’ll hear the highlights of a meal that you shouldn’t miss.

The other takeover is at Egg & Flour Pasta Bar in Crossroads Collective on two days – Dec. 13 and 14. Egg & Flour owner Adam Pawlak is bringing in a pasta chef from South Carolina and the duo will make pasta specials until they’re gone.

Next, we talk about Donut Monster opening a cafe in Whitefish Bay. Co-owned by chef Jackie Woods, Donut Monster (5169 N. Elkhart Ave.) offers a selection of really good doughnuts, breakfast sandwiches and Pilcrow coffee. Hear more on our episode.

We finish up with two events – Palomino’s bourbon dinner with Wisconsin-based distiller J. Henry & Sons on Dec. 17 and Three Brothers’ cozy night on Dec. 12. The latter will include special snacks and tortes and live music by Marielle Allschwang and the Visitations.

Ann Christenson has covered dining for Milwaukee Magazine since 1997. She was raised on a diet of casseroles that started with a pound of ground beef and a can of Campbell's soup. Feel free to share any casserole recipes with her.
