Chef Patrick Murphy has been able to keep his new job at the Walker’s Point restaurant AP Bar and Kitchen (814 S. Second St., 414-672-6000) under the radar for the last few months. The former chef de cuisine at Wauwatosa’s Le Rêve Patisserie & Cafe is putting his stamp on AP’s menu, which is a mix of small, shared and large plates. Murphy’s intention to weave in seasonal menu changes will factor in this fall and winter. Recent dishes include braised lamb shank with white bean ragu, and potato gnocchi with duck breast and English peas. Dishes that will stay on the menu include the AP cheeseburger, whole fish, and tuna tartare. Otherwise expect many changes to come (of a French and an Italian nature). Of his new, hands-on post, Murphy says, “Here I’m on the line, flipping food, burning myself and feeling the rush of burning myself.”
