East Side restaurant The Diplomat (815 E. Brady St.) is set to reopen. The 4-year-old regional American, specializing in small plates and the Diplomac burger, returns on Wednesday July 28 (4-9 p.m.). The dining establishment had stopped doing carryout orders in March (which it had been offering since June 2020) to prepare for in-person dining.
And some new staff – at least one name that may be familiar – has joined chef/owner Dane Baldwin. Joe Schreiter, former executive chef at Bay View’s Mistral, will help with reopening for the next few months, according to a press release. (Baldwin and Schreiter have both worked for Bartolotta Restaurant Group.) Also on board is chef Andrew Fisher, a former executive chef at Harbor House.
There’s also a new front-of-house manager – Vince Halpin, who was recently the GM at the Brookfield Mr. B’s – A Bartolotta Steakhouse. In the next few months, Halpin is expected to make changes to wine and beverage program.
“The past year has brought us all together and actually strengthened our team,” says Baldwin. “We’re excited to return to in-person dining and can’t wait to create dishes that surprise, delight and excite our guests.”
The Diplomat’s hours will be Wed-Sat 4-9 p.m.
