Chef/owner Tom Hauck’s six courses include pork belly with coffee, cherry and smoked potato (paired with a BV 2010 Pinot Noir); Ivory Arctic char with citrus, fennel, and honeycrisp (2009 Chardonnay); and short rib with horseradish, shallot confit, and root vegetable (2012 BV “The Count” Founders Red).
