Company Brewing will combine the cooking know-how of Bavette owner Karen Bell and the fermented beverage knowledge of George Bregar, a name better associated with coffee. Bregar is the (departing) director of coffee at Colectivo. Their brewing company/restaurant is slated for the space Stonefly Brewing Company (735 E. Center St.) has occupied for almost 10 years. Stonefly owner Julia LaLoggia has confirmed the closing, but not the closing date. (You’ve got a little time to order “Chicken Pot Pie and I Don’t Care.”)

At Company Brewing, Bell plans a more-than-typical brewpub menu, using the Bavette butcher shop as a source for its meats. But the Company kitchen will allow for Bell – or rather, the chef she hires – to build a more developed menu (than at Bavette), including seafood and vegetarian items and some family-style plates. The menu will also incorporate some of the Company beers. That list will include American and Belgian styles and beers made with wild yeast and oak. Bregar is a longtime home brewer.

With a remodeling project on the horizon, the opening date won’t be earlier than February 2015. More details to come.
