Andrew Miller, recently split from HOM Wood Fired Grill in Brookfield, is heading to Mequon. He will run the kitchen at Salotto Zarletti (1515 W. Mequon Rd.), the Italian restaurant slated to open this spring. Owner Brian Zarletti – whose downtown Zarletti (741 N. Milwaukee St.) turns 10 years old this year — plans to offer modern takes on southern and central regional Italian cuisine. Miller, Salotto’s executive chef, says he’ll be making breads and pastas, preserves (mostarda), fresh cheeses, and salami in-house. The two-level restaurant has a wood-burning oven (for pizzas, etc.). Again, you should expect a spring opening.
