Company Brewing (735 E. Center St.), projected to open in a few weeks, has made a major ownership change, per a press release from founder/brewmaster George Bregar. The former Colectivo director of coffee has parted ways with chef/partner Karen Bell (of the Third Ward’s Bavette butcher shop/restaurant) because of problems related to obtaining a brewpub permit. Apparently, a state of Wisconsin statute would prohibit Bell from holding a liquor license for both a brewpub or brewery and another business. (She holds a liquor license for Bavette.) Consequently, Bell has decided to “regretfully step away,” Bregar wrote in the release. He added that she will help recruit a chef and kitchen staff for Company Brewing.
