Pastiche at the Hotel Metro to Open Sept. 1

But that doesn’t mean the demise of Pastiche Bistro in Bay View just yet. The Kinnickinnic Avenue restaurant will continue to operate through summer.


This is a big year for Pastiche Bistro & Wine Bar co-owner Mike Engel. He not only opened a location of his French restaurant in Brown Deer (the old River Lane Inn). Hotel Metro’s (411 E. Mason St.) restaurant will become Pastiche at the Metro on September 1. Engel’s Bay View Pastiche is still open, and will continue its normal dining hours through summer. (Engel’s Bay View lease ends September 30.)

Between now and September 1, Engel – who was the head chef of Hotel Metro’s restaurant from 1998-2000 – and his staff will start looking at getting integrated into the Hotel Metro process. His business partner Rachael Karr will take over the Downtown location as executive chef. Once the changeover takes place from METRO Restaurant & Lounge to Pastiche, the menu will morph into Engel’s French bistro fare.

One big logistical difference for Pastiche at the Metro is that it will be a breakfast, lunch and dinner operation. Karr and staff will also handle room service, banquets and any other food operations in the hotel.
