Milwaukee Beer Week 2015 (April 18-25) is foam-dominant but food plays a role. At Hinterland, the beer-week food connection features executive chef Dan Van Rite cooking brunch (which happens but once a year) and doing the restaurant’s first-ever Fully Loaded All-you-can-eat BBQ.
Sunday brunch sounds so like Hinterland, with plates such as wild game chorizo hash; masa gnocchi with smoked brisket; cornmeal pancakes with chicken confit; seared rare tune with watercress, ramps, and spring onion puree; and pho with pork belly and poached egg ($9-$12-ish). Brunch is Sunday, April 19, 10 a.m.-2 p.m.
If you’re holding out for the all-you-can-eat spread– on Thursday April 23, 6-9 p.m. – the menu is heavy on the traditional Q: brisket, pork shoulder, pork ribs, collards, potato salad and vinegar slaw.
