Adam Pawlak of Egg & Flour is on fire. Not only does he have locations of Egg & Flour Pasta Bar on the East Side (Crossroads Collective food hall) and in Bay View, he has a new pizza place – Egg & Flour Pizzeria, also inside Crossroads Collective and is a contestant on season 19 of the food TV show “Hell’s Kitchen.” And now, one more thing: He’s just announced a third location for Egg & Flour, in Tosa, with a projected opening of early March 2021.
The Tosa space will be inside Metcalfe’s Market (6700 W. State St.). Like the location in Bay View, the Tosa pasta place will have a dining room and patio. Diners will order at the counter and, if eating there, a pager will let them know when their order is ready. Orders will also be available for carryout. The open-concept pasta-making area will be visible to diners as well.
The location will have several kinds of handmade daily pastas and specialty pastas, like ravioli. Beer, wine and soda will be for sale, too.
“We’ve worked very hard at setting (and meeting) high standards of consistency. Consistency makes or breaks you in this business,” says Pawlak, in a press release. “Our focus and commitment to bringing those standards to Wauwatosa is our top priority and from day one, we’ll be reinforcing those aspects in our team culture.”
