Grassroots Salad Company's Downtown location is set to open on April 30.

Grassroots, which has been putting “the healthy” into the food court at Brookfield Square since 2014, will hold the grand opening for its new Downtown location in the Chase building (607 N. Water St.) on Monday, April 30. Opened by Pete and Lou Liapas, Grassroots is known for styled salads (for example, Santa Fe in the photo above) that can also be served as a wrap (also a build-your-own salad format), along with fresh-squeezed juices.

The brothers also operate the treefort-themed Georgie Porgie’s burger/frozen custard joint in Oak Creek.

The salad concept’s Downtown location (the old Capriotti’s sandwich shop) will be reminiscent, menu wise, of its Brookfield location but offer some additions (including grains as a salad option, additional juices). You can view Brookfield’s menu here. The space offers stadium and table seating, and counter seats facing the windows.

Tentative hours: Mon-Fri 8 a.m.-4 p.m.; Sat 10 a.m.-2 p.m.
