Bakehouse 23 Has a Treat for Every Taste

Sarah Mironczuk’s minimal-waste approach leads to a unique and ever-changing menu.

Walk into pastry/dessert shop Bakehouse 23 (1309 Milwaukee Ave., South Milwaukee) and what you won’t see is a regular menu. “I like the creative freedom to make what I want every day,” says owner Sarah Mironczuk.

That doesn’t mean that if you fall in love with a butter crunch cake or brioche tart you buy one day, you’ll never see it again. Creations reappear, but her emphasis is on mixing things up. It allows Mironczuk – who, before she started her own business, worked as a restaurant pastry chef – to operate a minimal waste kitchen.

Her bread pudding is the product of a superfluity of cinnamon rolls and danishes. If there is a constant, she says, it’s that there is something for everyone – the vegan, the gluten-avoider, the savory-not-sweet eater. The shop also offers fresh soups made by Mironczuk’s chef/husband Kirk Skorlinski, who, too, is a nonconformist when it comes to what he makes.
