In late February, longtime Bartolotta chef Zach Espinosa moves from his recent work with the Mayfair Collection to this close to 18-year-old steakhouse.
In the restaurant world, chefs typically move around – a lot. For instance, Bartolotta Restaurant Group recently announced a little chef shuffling. Zach Espinosa – whose most recent gig was helping open the three Bartolotta-managed restaurants (Café Grace, among them) at Tosa’s The Mayfair Collection – will head up the kitchen at Mr. B’s Steakhouse (18380 W. Capitol Dr., Brookfield), beginning in late February. He replaces Dane Baldwin, who took over Mr. B’s kitchen in 2014 and has worked with Espinosa at both Bacchus and Harbor House.
