AJ Bombers, Smoke Shack and Holey Moley to Open at The Mayfair Collection

The trio of restaurants is expected to open later this year in the Wauwatosa shopping center.

Milwaukee’s Hospitality Democracy – which owns AJ Bombers, Swig, Water Buffalo and Smoke Shack, among others – plans to open three restaurants at The Mayfair Collection in Wauwatosa. They are likely familiar to you: AJ Bombers, Smoke Shack and Holey Moley. The three dining establishments will be housed in a 6,280-square-foot freestanding building, and each will replicate its original location. (For example: The Tosa Smoke Shack will include a seasonal outdoor patio/bar made from reclaimed barnwood.) As for Holey Moley, in addition to its lineup of doughnuts in a multitude of styles, the bakery will serve doughnut-frozen custard sandwiches – popularized last summer at Holey Moley’s location at Miller Park. The restaurants are scheduled to open beginning in late summer 2016. Hospitality Democracy’s Joe Sorge says he expects Smoke Shack to be first in opening order.

The Mayfair Collection, home to stores like Nordstrom Rack, is indeed filling out with places to eat. Bartolotta Restaurant Group (in partnership with Phoenix Hospitality Group) is expected to open three restaurants this summer, joining Osgood’s, a stand-alone hot dog/Italian beef joint. They are Taqueria El Jefe, ABV Social (a pub/tavern) and a French bistro called Cafe Grace.
