Dan Bieser, of Milwaukee’s Tabal Chocolate, contemplated the marriage of Wisconsin’s dairy darling and his chocolate after watching an episode of Netflix’s “Chef’s Table” featuring a cheese factory tour. Bieser explored the dipping possibilities with Walker’s Point’s Clock Shadow Creamery, eventually choosing four cheeses, bite-sized cubes of which are dunked in Tabal’s 70-percent Dominican cacao.
The chocolate’s fruity, floral, nutty notes highlight characteristics of each cheese (for instance, a goat milk cheddar’s sharpness). A 15-piece box is $25 at Clock Shadow Creamery and Amaranth Bakery & Cafe.
