Tonight is the grand opening of Milwaukee Beer Bistro, the joint replacing Rio West Cantina (2730 N. Humboldt Blvd.). After closing Rio West last month, owner Russ Davis threw himself into hops. Beer is an ingredient in everything on the menu -- from the crispy brat rolls to the stout-braised short ribs. For the time being, the menu will a limited small-plate affair ($5-$10). Items include garlic and cheese baked mussels, honey- and porter-stuffed chicken, and barbecued duck tortilla pizza. Of course the bar will dispense beer (12 craft brews on tap, for starters). More liquid choices to come. Most of the interior changes were cosmetic. Davis re-crafted the grape vine motif from his former joint, Cafe Vecchio to createe a hop vine theme. The tables are made from wood found at an Amish Wisco saw mill. If you check out the bistro tonight, they're serving free beer, 5-7 p.m. Also live music, 5-10 p.m. Coming soon: Friday fish fry, taco night, and a beer-infused Sunday brunch. Lunch service will start on Sat., Jan. 18. Hours-to-be: Mon-Fri 11 a.m.-close; Sat-Sun 10 a.m.-close. (414-562-5540)
